Help with my jetting and needle size

I have a dyno port stroker exhaust
A 35 mm pwk airstriker(on its way not set up only ordered #6 slide)
Cfm air box with recommended filter size ( I think 6in)
Going back to stock reed cage till I get v4s ( getting rid of rad valve )
Port and polish by KOR
Head milled by KOR (set up to run 180psi)
4 mm stroker crank
Ridding at sea level ( gonna ride threw winter around 30 degrees)
Gonna be trail mainly

Any help on where to start on all jetting and the needle would be great thank you

O yea .. it runs on 50%110 and 50%93 gas (will only run like this do to really high compression)

Your gonna need a cel needle too.im in Jersey also and I have the cel on the very bottom clip, 148 pilot and I have a 178 main in there now for the cold but and it runs rich still .on a 240 big bore 34mm pj carb ,250r air box, and vitos fat bastard pipe. .when I ran the dyno port pipe it didn't need as high main jet as I do with the fat bastard.

I dont know jetting for half race fuel hopefully someone else chimes in
