I have the same welder, it's almost made just for tacks, it's impossible to bead with it I wouldn't even try what he's doing.
Are you pushing the handpiece toward the work or are you dragging it long.
Conventional welding demands that you keep the weld pool behind the electrode.
Mig welding works better if you feed the wire into the weld pool trying to push it.

If you do water you will need a lid, if not leave it open, but bear in mind there will be a difference of 2 main jet sizes.
