was wanting to remove the on and off switch and also the key switch and replace with a kill teather. Can I simply unplug both or is there another process I need to follow

just unplug both, then use one of the sets of wires (solid black and black/white stripe) to connect your tether.
tape off seperately, each wire of the unused set.

Yes, simply unplug the 2 wires and you no longer need the key. If the plugs are disconnected, the bike is ready to start. Fantastic
What about the on/off switch does that simply disconnect also. And can I use the diagram I found on here to connect the kill teather
