Ok i have a vetos 240 kit fmf pipe vfoce3 reeds spacer plate twist throttle pre filter on airbox cover and k&n filter and a 28mm mikuni carb that i have a 330 main in it at 3/4 to full throttle it breaks up plug is a little dark but it is dry shoud i go bigger or smaller on main
 
thats a unique combonation you're running Bob
most who jump to the 240 cylinder don't run FMF's and 28mm carbs,
a toomey or right bend pipe and a 34/35/36mm keihin carb are the norm for 240's, and we have jetting info on.

I have run/seen 330 main jets on 200cc cylinders, my guess is you will need to go richer.

you say the plug was dark & dry, was that after a proper plug chop ?

Well the 28mm is a carb i bought for a differnt blaster and im getting the money up for a right bend pipe the 2 bigger jets i have ate 340 and a 370 from a yz250 i did i was thinking the 370
 
As mentioned proper plug chop (or read) is only way to tell. Dark plug could be from mid range (needle) .
You said it breaks up, does it go flat (stop pulling, increase rpm) or does it start blubbering?
A quick and dirty test would be to pull choke halfway out when it starts to break up.
