Why does spark plug gap vary?

The manual says to set spark gap from .28-.32 when exactly would you need the minimum or the maximum? I've just been going with .30 since its in the middle of recommended spec.
 
Makes sense, just wondering what factors change it. Like probably fuel compression coil a bunch of things. I just wonder how you know what are the right settings. Spark gap is probably hardly noticeable when changed so little.
 
oregandunes swears by .18 gap, says easier starting and less fouling i believe
both my bikes start 1-2 kicks, and have only ever fouled 1 plug in over 10 years of blasters, or i'd try it to see
